Brown sugar dumplings are an easy, homey dessert originating from Amish kitchens. The recipe I received was intentionally brief—as many traditional Amish recipes are—leaving out exact pan sizes and baking times because experienced home cooks often rely on intuition. After testing this version, I found it uncomplicated, perfectly sweet, and not overly rich.

Ingredients
- 1/2 cup white sugar
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 cup milk (or water), plus extra if needed
- Syrup: 1 cup packed brown sugar, 2 cups hot water, 2 tablespoons butter
Instructions
- In a medium saucepan combine the brown sugar, butter, and hot water. Stir until the brown sugar dissolves and the mixture becomes a smooth syrup. Bring to a boil, then remove from heat briefly while you prepare the dumpling dough.
- In a mixing bowl combine the white sugar, flour, and baking powder. Add 1/2 cup milk (or water) and stir to form a dough. The mixture should be somewhere between coarse crumbs and a soft, slightly elastic dough. If it seems too dry, add a teaspoon or two more milk until you reach the right consistency.
- Preheat the oven to 350°F (175°C). Pour the boiling syrup into an 8 x 8-inch square baking pan.
- Using a teaspoon, drop spoonfuls of the dumpling dough into the hot syrup. Arrange the dough in three rows of three, or evenly space the spoonfuls so they will bake into a thick, even layer.
- Place the baking dish in the preheated oven and bake for about 30 minutes, or until the dumplings are golden on top and set. Baking time can vary slightly—look for a golden top and cooked-through dumplings.
- When finished, the dumplings will form a thick layer on top with the syrup pooling beneath. Let the pan cool until the syrup thickens slightly, then cut into squares.
- Serve warm, spooning extra syrup over each portion. A dollop of whipped cream or a scoop of vanilla ice cream complements the dumplings beautifully.
Notes: This straightforward Amish dessert relies on simple pantry items and easy technique. Adjust the milk in the dumpling dough to get the right texture, and taste the syrup as it cooks—if you prefer a deeper flavor, a teaspoon of vanilla or a pinch of salt can enhance the finished dish without changing its traditional character.
