Can I Use Long Grain Rice?

Yes. Short-grain rice gives the creamiest result and is preferred, but you can substitute long-grain rice if that’s what you have on hand. Expect a slightly different texture.

Do I Have to Add Sweetened Condensed Milk?

Sweetened condensed milk is optional but recommended. It adds sweetness and a silky mouthfeel that sugar alone can’t match. If you prefer, use granulated sugar to taste instead.

Ingredients

  • 1 cup short-grain rice
  • 1 1/4 cups water
  • 2 cups whole milk
  • 1/4 tsp salt
  • 1 tbsp granulated sugar
  • 1 can sweetened condensed milk
  • 1 tsp vanilla extract
  • 1 cinnamon stick
  • Ground cinnamon, to taste

Instructions

  1. Rinse the rice 2–3 times to remove excess starch.
  2. Place the rinsed rice, water, whole milk, salt, sugar and the cinnamon stick in the Instant Pot. Stir to combine.
  3. Seal the lid and select the porridge function (or manual pressure on low if your model requires). Cook for 20 minutes.
  4. When cooking ends, release the pressure fully before opening the lid.
  5. Remove the cinnamon stick, then stir in the vanilla extract and the sweetened condensed milk until smooth.
  6. Serve warm, at room temperature, or chilled. If refrigerated, stir in a splash of milk before serving if it has thickened.
