
So, how do I come up with new recipes?
One of the questions I hear most is where my recipe ideas come from.
You might expect I’d run out of ideas after years of blogging, but inspiration keeps coming. I’m always thinking about food—sometimes at odd moments like while eating, exercising, or drifting off to sleep.
Notes and ideas show up on scraps of paper around the apartment. When nothing else is handy, I’ll jot ideas on a cereal box, a receipt, or even a paper towel.

What inspired the avocado crème brûlée?
Two things—both driven by a desire to try something different.
First, I had an avocado to use and wanted to avoid the usual options like guacamole or chocolate avocado pudding. Second, with St. Patrick’s Day approaching, I wanted a festive dessert that wasn’t the obvious choices like key lime pie, Guinness brownies, or mint chocolate treats.
I pictured a split sheet of paper: on the left I wrote “avocado,” and on the right I listed desserts. When “crème brûlée” landed on that list, I knew I had to try combining the two.


Avocado Crème Brûlée
Ingredients
- 1/2 cup mashed ripe avocado
- 1/2 cup milk of choice or canned coconut milk
- 1/2 tsp pure vanilla extract
- 1/16 tsp salt
- 3 tbsp sweetener of choice (see note below)
- 2-3 tsp brown sugar or coconut sugar (omit for a sugar-free version that won’t have the classic caramelized top)
Instructions

If using a liquid sweetener, reduce the milk by three tablespoons.
Puree the first five ingredients until completely smooth. Pour the mixture into oven-safe ramekins or small dishes and refrigerate until thick like mousse—about five hours or overnight. You can serve these as a mousse without the brûlée topping if you prefer.
Before serving, sprinkle about a teaspoon of brown or coconut sugar evenly on top of each dish. To caramelize the sugar, either place the dishes under the oven broiler (watch closely and rotate often) for 5–10 minutes, or use a kitchen blow torch to burn the sugar until it forms a crisp top.
