How to make Halloween cookies

For the deepest, most chocolatey color, use Dutch-processed cocoa powder. If you want an extra-dark look for Halloween, a black cocoa will make the filling very dramatic.

Allow the fudge to cool until it is no longer warm but still soft and pipeable. Transfer it to a piping bag and pipe mounds onto half of the cookies, then top with the remaining cookies to form sandwiches.

Ingredients

  • 30 oatmeal cookies (or your preferred cookie) (I omitted the raisins in the original)
  • 1 can / 397g sweetened condensed milk (dairy or non-dairy)
  • 1 cup / 170g chocolate chips
  • ¼ cup cocoa powder (Dutch-processed yields a darker fudge)
  • 30 candy eyes

Instructions

  • Combine condensed milk and chocolate chips in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until smooth and fully melted. Stir in sifted cocoa powder until evenly incorporated.
  • Let the fudge cool until it’s no longer hot but still soft enough to pipe. Spoon or pipe a portion onto one cookie and press a second cookie on top to form a sandwich. Repeat for the remaining cookies.
  • Press candy eyes into the filling while it’s soft, or decorate as desired. Allow the filling to set slightly before serving.
