- 1 cup French green lentils
- 4 cups water or vegetable broth
- 2 cloves garlic smashed
- 2 large bay leaves optional
- ½ teaspoon salt more or less to taste

Instructions

Place 1 cup French green lentils in a fine mesh strainer and rinse thoroughly under running water. Remove any small stones or damaged lentils.

Transfer the rinsed lentils to a medium pot. Add 4 cups water (or vegetable broth), 2 smashed garlic cloves, and 2 large bay leaves if using. Stir to combine.

Bring the pot to a rapid boil over high heat.

Once boiling, reduce the heat to low, cover, and simmer. Stir occasionally and check for tenderness between 15 and 30 minutes, depending on your lentils.

When the lentils are tender, remove the pot from heat and drain any excess liquid.
