After several failed attempts using beans and starches, I returned to an old favorite: avocado. Avocado adds a luxurious creaminess without dairy. If you’re hesitant about avocado in desserts, don’t be — the trick is to use avocados that are only slightly soft, even a touch under‑ripe. That texture and mild flavor blend seamlessly with chocolate and sweetener, producing an indulgent treat that tastes rich and velvety while still being wholesome.
You can customize this base with mix‑ins like chocolate chips, chopped nuts, or even homemade marshmallows for a rocky road variation. My ultimate test is whether my oldest daughter will eat it — she loved it, and if she couldn’t detect the avocado, it’s a safe bet most people won’t either.
