Grilled yellow squash is a simple, flavorful side that grills well and can be served warm or chilled.

Ingredients


  • Yellow squash

  • Olive oil

  • Kosher salt

  • Black pepper

Instructions

  • Heat the grill to medium-high (about 375–400°F).
  • Slice the squash in half lengthwise.
  • Brush the cut sides with olive oil and season with kosher salt and black pepper.
  • Place squash cut-side down on the grill and cook for about 7 minutes, until nicely charred.
  • Flip and grill an additional 8 minutes, or until tender. Serve warm or chilled.
