A simple, flavorful accompaniment that often gets overlooked is sugar free pickled ginger. It brightens each bite and cleanses the palate between different sushi flavors without adding carbs.

Why Pickled Ginger Is Served with Sushi

Traditionally, pickled ginger (gari) is served to refresh the palate between different pieces of sushi. When you order multiple courses—each with different textures and flavors—ginger clears lingering tastes so you can appreciate the next bite.

Commercial pickled ginger is usually made with young ginger marinated in rice vinegar and sugar. Since rice vinegar can contain sugar, and restaurants often add sugar to the marinade, those bright pink slices can bring unwanted carbs. Making your own sugar free version keeps the cleansing benefit without the added sugars.

Making Keto-Friendly Sugar Free Pickled Ginger

It’s easy: use a zero‑carb rice vinegar and a low‑carb sweetener. I’ve experimented with a few approaches; below are practical tips that produce tender, flavorful ginger:

  • Choose young ginger when possible—its skin is thin and the flesh is tender, so it slices thinly and has a milder flavor.
  • Use a mandoline or a vegetable peeler to make even, thin slices. A peeler works well for young ginger.
  • If your ginger is older or fibrous, slice thicker and blanch a bit longer to soften it.
  • I usually make a small batch that will last about a week in the refrigerator. If you prefer long‑term storage, follow proper canning and pickling procedures to preserve larger quantities safely.

Ingredients

  • Young ginger root (or regular ginger if that’s what you have)
  • Kosher salt or sea salt
  • 1/2 cup natural rice vinegar (choose a variety with no added sugar)
  • 2–3 tablespoons granular sweetener of choice (allulose works best because it doesn’t crystallize when cooled)

Step-by-Step Method

  1. Peel or scrape the skin from the ginger. Young ginger needs only light scraping; older ginger should be peeled with a vegetable peeler.
  2. Slice the ginger very thinly with a mandoline or vegetable peeler.
  3. Arrange the slices on a plate and sprinkle lightly with kosher salt. Let them sit for a few minutes to draw out moisture.
  4. While the ginger rests, bring 1/2 cup rice vinegar to a boil for about 5 minutes.
  5. Stir in your chosen sweetener, remove the vinegar from heat, and let it cool slightly.
  6. Cover the salted ginger with water and either microwave briefly or boil for about 2 minutes to soften. Let cool slightly.
  7. Drain the ginger well and squeeze gently to remove excess water.
  8. Pack the ginger into a clean jar and pour the vinegar and sweetener mixture over the slices, ensuring they are fully submerged.
  9. Refrigerate. The ginger is best within a week if stored chilled; for longer storage, follow proper canning guidelines.

Homemade sugar free pickled ginger will be pale, not the neon pink you often see at restaurants. Occasionally a faint pink tinge develops naturally depending on the ginger, but intense pink color in commercial varieties is often from added dye—another reason to make your own.
