As a parent of four, I need quick dinner options. If you’re juggling kids and evenings, a 30-minute, kid-friendly recipe is a lifesaver. Pair these meatballs with a jar of sauce for a simple, satisfying meal when the pre-dinner hour turns chaotic.

Instead of oats or breadcrumbs, this recipe uses potato. Use russet or sweet potatoes—sweet potato will make the meatballs slightly sweeter, which can be a nice variation.

Grain Free Easy meatballs

An easy 30-minute meatball recipe that is grain-free and full of flavor—perfect for gluten-free, dairy-free, and paleo diets.

Ingredients

  • 1 lb ground meat
  • 1 cup peeled and diced potato (about 2 small russet potatoes)
  • 1/2 yellow onion
  • 2 garlic cloves
  • 1 egg
  • 1 T dried parsley
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp dried rosemary
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a food processor or high-powered blender, puree the potato, onion, and garlic until smooth. If there is excess liquid, strain it through a clean towel and discard the liquid.
  3. In a medium bowl, combine the ground meat, egg, pureed potato mixture, and seasonings. Mix thoroughly—use a spoon or your hands to ensure even distribution.
  4. Grease a 14″ cast-iron skillet or a glass baking dish.
  5. Form the mixture into meatballs (2–3 tablespoons per ball works well). Place them close together around the edge of the pan, then fill the center.
  6. Bake for about 20 minutes, or until cooked through. Cooking time will vary with meatball size; a meat thermometer is helpful to check doneness.
  7. Once cooked, pour spaghetti sauce into the pan and warm together before serving. If using cast iron, you can heat it on the stove to meld flavors.
