
Guess who’s headed to the World Series for the first time in 29 years?

The last time the Royals made it to the World Series, I was a kid — probably in a pumpkin suit or watching Elmo — cheering them on back in 1985.

Fast forward twenty-nine years: yesterday I was packed into a midtown dive bar with about ten friends and thousands of fellow fans, eating, drinking, chanting “Let’s go Royals!” and then completely losing it when the Royals clinched their spot in the World Series. We won — Kansas City won — and the city exploded with cheering. It was unforgettable.
The game was full of highlights: my former student Gracie sang God Bless America in the seventh inning, Paul Rudd returned to town for the game, and I listened to my friend Sara Swenson’s song “Let The Good Boys Win” on the ride home. Proud, silly, and celebratory all at once.
So prepare for a week of game-day recipes on the blog. To kick things off, I’m sharing my take on a classic crowd-pleaser: 7 Layer Dip.
I made this version after a friend specifically requested it for a watch party. I’ve made 7 Layer Dip a few times before but never photographed or posted my version — until now.
My version focuses on color and freshness.
And great flavor.

Seven-layer dip recipes vary, and it’s often hard to say exactly what counts as the “seven” layers. Traditional ingredients include refried beans, guacamole, taco-seasoned sour cream, and cheese. I add a bright mix of red and yellow cherry tomatoes, black olives, green onions, extra red onion and cilantro (some of which are folded into the guacamole). They create a colorful, fresh topping that’s perfect for parties.

To assemble this dip, layer each component evenly in a shallow casserole dish or platter so guests can scoop through multiple layers in one bite. I don’t recommend a deep trifle bowl — you want shallower layers so chips reach everything in a single scoop.

Once it’s assembled, take a moment to admire the bright, happy layers — then dig in.

7 Layer Dip

Ingredients
- 1 (16-ounce) container sour cream (2 cups)
- ¼ cup (1 packet) Old El Paso taco seasoning
- 2 (15-ounce) cans Old El Paso refried beans
- 3 cups freshly-made guacamole
- 2 cups shredded Mexican cheese
- 2 cups cherry or grape tomatoes, halved
- ½ cup sliced (drained) black olives
- ⅓ cup diced red onion
- ¼ cup thinly-sliced green onions
- ¼ cup fresh roughly-chopped cilantro leaves
Instructions

In a small bowl, whisk together the sour cream and taco seasoning until well combined. Set aside.

Spread the refried beans in an even layer in the bottom of a 9×13-inch baking dish. Top with the guacamole in an even layer, then the seasoned sour cream, followed by cheese, halved tomatoes, sliced olives, diced red onion, and green onions. Finish with the chopped cilantro sprinkled on top.

Serve immediately with chips for dipping, or cover and refrigerate for up to 6 hours.
