I use Kaukauna-style packed cheddar because it holds up well during baking and adds a rich, creamy flavor. It’s sold near the deli or in the specialty cheese section.

Other cheeses can work, but avoid ones that melt away too thinly. Choose a firmer spreadable or packed cheddar-style cheese for the best texture and flavor. The budget-friendly store equivalents also work fine.

Ready-made biscuit dough makes this recipe especially convenient for holidays or busy mornings. If you prefer, puff pastry is a fancier alternative, but canned biscuit dough bakes up perfectly and saves time.

When pressing the dough into the muffin tin, form a deep cup and leave enough room for the egg filling.

Simple, comforting biscuits filled with eggs and a spreadable cheddar make a great breakfast or brunch. They’re easy to prepare ahead and reheat well.

Ingredients

  • 1 (10 oz) packed sharp cheddar cheese ball (Kaukauna-style or similar spreadable packed cheddar)
  • *This type of cheese is usually found near the deli or in the specialty cheese section
  • 12 ready-made biscuit dough rounds
  • 6 eggs
  • Salt and pepper, to taste

Instructions

  • Preheat oven to 350°F (175°C). Spray a 12-cup muffin pan with nonstick spray.
  • Press each biscuit round into a muffin cup, creating a deep indentation and forming the dough up the sides.
  • In a bowl or measuring cup, whisk the 6 eggs and season with salt and pepper.
  • Pour the whisked eggs into each biscuit cup until about halfway full.
  • Remove the cheese ball from its packaging. Place it in a microwave-safe bowl and warm about 1 minute until soft enough to scoop (adjust time as needed).
  • Drop about 2 teaspoons of softened cheese into each egg cup. A small amount of overflow is fine—just avoid overfilling.
  • Bake on the center rack for about 35 minutes, or until biscuits are golden and eggs are set.
  • Cool for 10 minutes before removing from the pan. Sprinkle with dried parsley if desired and serve warm.
