A heatwave hit London this week, and popsicles have been the only thing keeping me cool. These Caramelized Peaches & Cream Popsicles are one of my favourite flavours so far — gently sweet, creamy, and evocative of a peach cobbler.

Sautéing the peaches with honey, ginger and coconut oil deepens their flavour and produces an ultra‑creamy popsicle.

These peach popsicles are perfect in summer when peaches are at their best, but you can also make them year‑round using frozen peaches.

Caramelised Peaches & Cream Popsicles

Peach popsicles are ideal when peaches are in season, but frozen peaches work well too.

Servings: 6 -8 popsicles

Ingredients 

  • 4 peaches pitted and sliced
  • 1 tbsp coconut oil
  • 3 tbsp honey (or maple syrup)
  • 1/2 tsp ground ginger
  • 1 cup coconut cream (the thick part from a chilled can of coconut milk)
  • 1 tsp vanilla extract

Instructions 

  • Warm the coconut oil in a pan over medium heat. Add the peach slices, 2 tbsp honey and the ginger. Cook 5–6 minutes until the peaches soften and begin to caramelize.
  • Remove from heat and transfer the mixture to a blender. Puree until smooth and set aside to cool to room temperature.
  • In a bowl, whisk the coconut cream with the remaining 1 tbsp honey and the vanilla extract.
  • Spoon peach puree into each popsicle mould halfway up, tapping the mould on the counter to settle the puree into the corners. Add two spoonfuls of the coconut cream, then top up with more peach puree.
  • Insert a popsicle stick or skewer and gently swirl to create a marbled effect, taking care not to overmix. Freeze for 4–5 hours or until solid.
