We’re heading to Tokyo, Japan this Sunday—an exciting trip we’ve dreamed about for a long time. After traveling over Christmas we decided to stop making excuses and just book it. This year we’re calling a year of “no excuses”: if you don’t do it now, you’ll only be a year older when you finally go. So we took the plunge and made our plans.
Our trip includes four nights in Niseko Mountain—covered by our Colorado Epic Pass—where we’ll ski and soak up mountain life on the other side of the world. After that we’ll spend four nights in Tokyo, exploring Japanese culture, history, and of course the food. I’ve scheduled a sushi-making class, a tour of the famous fish market, and a dive-bar street-food crawl. I also have a list of must-try ramen shops—foodie overload is imminent.
To celebrate the trip, here are 10 easy noodle bowl recipes to make at home. Each recipe is full of flavor but requires minimal fuss—perfect for weeknights or relaxed weekends. Ready for a chopstick high-five?
I’ll share updates while I’m away—follow along on Instagram, Facebook, and Twitter and watch for the hashtag #cgmjapan.
