Caramel & Butterscotch Chip Cookie Sticks: Crispy Snack Recipe

The name is a mouthful, but these cookie sticks are worth it. Swapping plain chocolate chips for a mix of caramel, butterscotch, and white chocolate chips transforms a familiar cookie into something special. The recipe became one of my family favorites after a happy kitchen accident — I once ran out of chocolate chips and used whatever I had on hand. My mother-in-law loved the result and asked for the “new” recipe, though it turned out it was my own improvised version she remembered!

This recipe is flexible — use the combination shown here or swap in peanut butter, cappuccino, or classic chocolate chips. It’s perfect for using whatever you have in the pantry and for experimenting with new flavor pairings.

As with many of my baked treats, this is a simple, one-bowl recipe that comes together quickly. No mixer and no complicated steps: just combine the ingredients, shape into logs, bake, and slice.

For best results, slice the cookie logs while they are still warm. A pastry dough scraper works very well for this task, helping you get clean, even slices without tearing the cookies.

Butterscotch and Caramel Chocolate Chip Cookie Sticks

Ingredients

  • ¾ cup oil
  • 1 cup brown sugar
  • 1 tsp vanilla
  • 2 eggs
  • 2 cups flour
  • ½ tsp baking soda
  • cup caramel chips
  • cup butterscotch chips
  • cup white chocolate chips

Instructions

  • Preheat the oven to 350°F and line a cookie sheet with parchment paper.
  • Place all ingredients into a mixing bowl and stir with a spoon until just combined.
  • Divide the dough into two equal parts. Shape each portion into a long, thin log on the prepared baking sheet.
  • Bake for about 20 minutes. Remove from the oven and slice while the logs are still warm.

Notes

Feel free to substitute any flavor or combination of chips to suit your taste. These cookie sticks store well in an airtight container for several days.
