Thank goodness it’s Friday! This week brought wild weather: a snowstorm on Tuesday and bright blue skies on Wednesday. The swings have been a little ridiculous—anyone else dealing with unpredictable weather?
I put together a great meal plan this week. Sticky Coconut Chicken is a stand-out—it may be one of my top five favorite meals. Serve it with coconut rice and drizzle extra sauce over the rice for the best flavor. Slow Cooker Chicken Pot Pie is classic comfort food and always a hit. And now that Cadbury mini eggs are back on shelves, I’m tempted every time I walk through the store. My Chocolate Cadbury Egg Cookies have been calling my name—resisting extra bags of candy takes real willpower!
