They topped their taco salad with Doritos, and even as a picky kid I ordered mine with just meat, cheese and chips. The crunchy, seasoned Doritos paired perfectly with the savory taco meat. Ingredients
- 1 lb ground beef, cooked and drained
- 1 oz packet taco seasoning
- 1/2 cup water
- 13.5 oz can cheddar cheese soup (substitute 10.75 oz if needed)
- 16 oz can refried beans
- 15.25 oz can black beans, drained
- 2 cups shredded cheddar cheese
- 1 bag Doritos, crushed for topping
Instructions
- Combine the water and taco seasoning in a small bowl and stir until mixed.
- Toss the seasoned water mixture with the cooked, drained ground beef and set aside.
- In a separate large bowl, stir together the cheddar cheese soup, refried beans and drained black beans until smooth.
- Add the seasoned ground beef to the bean mixture and stir until everything is well combined.
- Spread the mixture into a lightly greased 6-quart slow cooker or casserole-style crock.
- Sprinkle the shredded cheddar cheese evenly over the top.
- Cover and cook on low for 4 hours or on high for 2 hours, until heated through and the cheese is melted.
- Remove the crock from the heating unit and allow the casserole to rest for about 30 minutes to set.
- Just before serving, sprinkle crumbled Doritos over the top for crunch and extra flavor.
Notes
- If you have the smaller 10.75 oz can of cheddar cheese soup, it will work in place of the 13.5 oz can.
