If pumpkins go on sale after Halloween, stock up and make several batches. My niece declared, “I love bacon,” after trying them, and her brother kept coming back to the bowl saying, “I can’t stop eating these.” The adults were silent—they were too busy enjoying the seeds.

Bacon Pumpkin Seeds

pumpkin seeds, use: -

slice
bacon, chopped -
1
tsp.
brown sugar -

barbecue spice rub, I used Rudy’s
Instructions

Preheat the oven to 375°F (190°C).

Scoop the seeds from the pumpkin and rinse them thoroughly to remove pulp. Pat dry.

In a bowl, combine the seeds, chopped bacon, brown sugar, and barbecue rub until evenly coated.

Spread the mixture in a single layer on a foil-lined rimmed baking sheet.

Bake for 15 minutes, stir with a spatula, then bake another 5 minutes. Watch closely so the seeds don’t burn.

Remove from the oven and transfer to a paper towel–lined plate to drain excess grease.

Place in a serving bowl and enjoy warm or at room temperature.
Notes
Scale the recipe up: double or triple the ingredients for each additional 1/4 cup of cleaned seeds.
