Ingredients
- 2 tablespoons butter
- 2 tablespoons olive oil
- ½ medium onion, diced
- 4 garlic cloves, minced
- 3 pounds vine-ripened tomatoes, chopped
- 1 pound Roma tomatoes, chopped
- ½ cup chopped Kalamata olives
- 1 tablespoon dried basil
- 1 tablespoon dried oregano
- ½ tablespoon dried parsley
- ½ tablespoon dried rosemary
- 1 teaspoon granulated sugar substitute (Swerve) or another keto sweetener, to taste
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
- In a large stockpot over medium heat, melt the butter with the olive oil. Add the diced onion and cook until softened, about 5–7 minutes. Add the garlic during the last minute and cook briefly.
- Add the chopped tomatoes, chopped Kalamata olives, dried herbs, sweetener, salt, and pepper. Bring the mixture to a boil over high heat.
