
What’s For Dinner?
Hi friends — happy new week and welcome to this week’s meal plan. I’m excited to share our family dinners for the coming days, featuring some favorite Southern dishes, a lighter take on refried beans for Mexican nights, and a simple pasta that’s become a go-to. These meals are practical, family-friendly, and easy to prepare.

Here’s What’s For Dinner This Week
Monday: BBQ chicken tenders grilled to perfection, served with Southern-style yellow squash, creamy mashed potatoes, black-eyed peas, and sliced vine-ripened tomatoes. A comforting, down-home dinner that’s perfect to start the week.
Tuesday: Leftovers for an easy night, plus a summer treat of Southern-style biscuits with fresh strawberries for dessert — simple and delightful.
Wednesday: Ranchero vegan pinto beans made with a no-soak method, served with cornbread and a crisp cucumber, onion, and tomato salad. It’s a light, flavorful midweek meal.
Thursday: Super simple pasta: cooked pasta tossed with good olive oil, chopped cherry tomatoes, freshly chopped basil and oregano, and a splash more olive oil. Fast, fresh, and ideal for gardeners or anyone with a ripe tomato bounty.
Friday: Leftover ranchero pinto beans mashed into healthier refried beans without excessive oil. Instead of frying, I use vegetable or chicken stock to mash the beans and season with cumin, chili powder, garlic powder, and onion powder. We’ll use these beans for burritos and tacos with all the fixings — and my current favorite topping, thinly sliced radish, adds a fantastic crunch.
Saturday: Dinner out at a local Veggie Grill — an all-vegan menu that’s fun and satisfying when you want someone else to do the cooking.
Sunday: Grilled chicken breasts and vegetable skewers. I like mine served over a bed of greens while the rest of the family has rice. I might make a peanut dipping sauce for my youngest — it’s his favorite. For the peanut sauce I use, check your favorite recipe source.
