After my daughter Kelsey was diagnosed as lactose intolerant, I started exploring dairy-free recipes more. This creamer isn’t for her—she’s too young for coffee—but it’s for anyone who wants a homemade creamer without dairy.

This creamer is rich and smooth — almost like melted coconut ice cream, but without an overpowering coconut taste. I love coconut, so even if the flavor were stronger I’d be happy. In fact, I’m experimenting with a dairy-free ice cream that uses this creamer as a base because the texture and flavor lend themselves well to frozen treats.

Now that I’m off on my ice-cream tangent, let’s return to coffee.
I’ve been enjoying this creamer with Folgers instant coffee. Instant coffee is convenient — quick to prepare, with minimal cleanup and no need for pods or filters. It’s a simple way to get a fast, satisfying cup when you want a quick caffeine boost.

Less mess and brewed in a flash equals a fast caffeine fix.
I also keep instant coffee on hand for recipes that call for coffee as an ingredient. It dissolves easily and adds the same depth of flavor without brewing a whole pot. I often use it in chocolate truffle recipes and other desserts that benefit from a hint of coffee.

Ingredients
- 1 14 oz can full fat coconut milk
- 1 11.25 oz can sweetened condensed coconut milk
- 2 tsp vanilla extract
Instructions

Combine all ingredients in a blender and blend for about 1 minute until smooth. Transfer to a glass container, such as a mason jar, and refrigerate. Shake before each use. Keeps several days in the refrigerator.
